Vegan Russian Dressing Tofu Style

Description
This is a low-fat version of Russian dressing made with tofu as the base instead of sesame seeds.
Ingredients

- 2–3 medium size pickles of your choice
- 6–8 oz of silken tofu (half a package)
- 1/3 cup unsweetened ketchup
- If you like a kick add 1/2 teaspoon of horseradish and a clove of minced garlic
Instructions
- Chop up pickles in a mini-chopper or food processor.
- Add tofu and ketchup to the pickles in the chopper/processor.
- Blend until fully combined.
- Transfer the mixture to a bowl and stir in horseradish and garlic if using. Start with a ¼ teaspoon of horseradish and add to taste
