Vegan Russian Dressing Tofu Style

This is a low-fat version of Russian dressing made with tofu as the base instead of sesame seeds.


  • 23 medium size pickles of your choice
  • 68 oz of silken tofu (half a package)
  • 1/3 cup unsweetened ketchup
  • If you like a kick add 1/2 teaspoon of horseradish and a clove of minced garlic



  1. Chop up pickles in a mini-chopper or food processor.
  2. Add tofu and ketchup to the pickles in the chopper/processor.
  3. Blend until fully combined.
  4. Transfer the mixture to a bowl and stir in horseradish and garlic if using. Start with a ¼ teaspoon of horseradish and add to taste
