Vegan Coleslaw

Description

Crunchy, creamy vegan coleslaw is perfect as a side dish or on top of a Reuben sandwich


Ingredients

Scale
  • 1/2 cup sesame seeds
  • 3/41 cup of water
  • 2 tablespoons of apple cider vinegar or white vinegar
  • 1 tablespoon of maple syrup
  • Juice of a lemon
  • Small bag of coleslaw mix or 1/2 head of cabbage grated
  • 1 teaspoon of Trader Joe’s Green Goddess Seasoning (only if you have this, don’t run out and buy it) or salt (if you use) and pepper to taste

Instructions

  1. Warm sesame seeds in a pan, barely toast. Put ¾ cup of water into a high-speed blender. 
  2. Add the toasted sesame seeds, apple cider vinegar or white vinegar, maple syrup, lemon juice and blend until smooth. Add more water if needed. You don’t want this to be too thick. It should pour easily out of the blender
  3. If you don’t like your coleslaw super crunchy, put it in a colander and pour boiling water over it. Drain thoroughly
  4. Pour coleslaw mix into a mixing bowl. Add enough of the sesame seed mixture to thoroughly coat

 

Notes

Best refrigerated for 30 minutes before eating, but not necessary.
