Chickpea Tuna Salad

Description

Chickpea tuna salad is a great way to enjoy a delicious vegan sandwich with all the things that you would normally enjoy in a tuna sandwich, minus the fish.


Ingredients

Units Scale
  • 1 can of chickpeas drained and rinsed
  • 1 rib of celery, diced
  • 1/3 cup of red onion, diced
  • 1/4 cup of diced apples
  • 2 pickles, diced fine (or 1/3 cup of relish)
  • 1/2 to 1 teaspoon of kelp granules depending how much you like a fishy flavor
  • Squeeze of lemon
  • Vegan mayo

Instructions

  1. Pulse the chickpeas in a mini-chopper, food processor, or just hand chop. You don’t want it mushy like hummus, just break up the solid pieces a little
  2. Add the vegan mayo
  3. Add the celery, onions, pickles, apples, kelp, and lemon
  4. Toss to coat

Notes

You can use any ingredients that you would normally like in your tuna. These are just my favorites.
