Description
Chickpea tuna salad is a great way to enjoy a delicious vegan sandwich with all the things that you would normally enjoy in a tuna sandwich, minus the fish.

- 1 can of chickpeas drained and rinsed
- 1 rib of celery, diced
- 1/3 cup of red onion, diced
- 1/4 cup of diced apples
- 2 pickles, diced fine (or 1/3 cup of relish)
- 1/2 to 1 teaspoon of kelp granules depending how much you like a fishy flavor
- Squeeze of lemon
- Vegan mayo
Instructions
- Pulse the chickpeas in a mini-chopper, food processor, or just hand chop. You don’t want it mushy like hummus, just break up the solid pieces a little
- Add the vegan mayo
- Add the celery, onions, pickles, apples, kelp, and lemon
- Toss to coat
Notes
You can use any ingredients that you would normally like in your tuna. These are just my favorites.
