Vegan Mayo for Pasta Salad or Potato Salad

Description

This mayo is a little bit fattier and tangier than my other mayo recipe. I love this for pasta or potato salad but it can be used on sandwiches or tuno or chickenless salad too!


Ingredients

Scale
  • 1 cup silken tofu
  • 1 tablespoon of maple syrup
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of pickle juice
  • 3 tablespoons of red wine vinegar
  • 1/2 teaspoon of garlic powder
  • Salt and pepper optional
  • Sprinkle of celery seed
  • 1 tablespoon of tahini

Instructions

  1. Blend everything together in a mini-chopper or blender except tahini.
  2. Mix tahini into the blended mayo
