Vegan Burger Bun

Description

This bun is great for sandwiches or as a dinner roll


Ingredients

Units Scale
  • 3 and 3/4 cups of flour (I use 1 cup of bread flour and 2 and 3/4 cups of white whole wheat flour)
  • 2 1/4 teaspoon of quick rise yeast
  • 1 1/2 cup of plant milk
  • 2 tablespoons of maple syrup
  • 2 tablespoons of apple sauce
  • 2 tablespoons of ground flaxseed meal
  • 1 teaspoon of salt

For Wash

  • 2 tablespoons of plant-milk
  • 1 teaspoon of maple syrup
  • Sesame seeds or everything but the bagel seasoning for sprinkling

Instructions

  1. Mix together ground flaxseed and 3 tablespoons of water, set aside for 10 minutes
  2. Heat plant milk to 115 degrees (if you don’t have a thermometer, it’s right at the moment when little bubbles will start to form around the perimeter of the milk)
  3. Pour warm milk, yeast, and maple syrup into a large bowl, mix and let the yeast bloom for 5 minutes. You can technically skip heating the milk and letting it bloom with quick rise yeast, but I like to do this step
  4. In the milk mixture bowl, add the flaxseed mixture and applesauce and stir. Mix in flour and salt into the wet ingredients. Combine well and cover the bowl with a towel. Let it rest for five minutes in a warm place
  5. Dust a work surface with a little bit of flour, transfer dough to work surface. Knead by using the heel of your hand to stretch the dough away from you then bring it back and collect it. Keep doing this for about five minutes
  6. Shape into a ball, put it back in the large bowl and cover with plastic wrap or a towel and let it rise for 40 minutes in a warm place (I put it in the microwave without putting it on)
  7. After 40 minutes, divide the dough into ten equal pieces
  8. Shape each piece into a ball by flattening and then collecting the edges and folding them into the middle. You will have a ball shape, but roll it around a tiny bit to perfect it. Repeat with the rest of the pieces
  9. Place the balls of dough on a baking sheet covered in parchment paper. Let them rise again for an hour (this is called proofing the dough)
  10. When the hour is almost up, preheat the oven to 375 degrees. Make the wash by combining the plant milk and syrup. Before popping the dough in the oven, brush each bun with the wash then sprinkle sesame seeds or bagel seasoning on each one
  11. Bake for 15 minutes, flip the bun and bake for 5 more minutes. Remove from oven and cool on a wire rack for 10 minutes
