Jennifer Aniston Salad

Description
This salad is a low-fat, veganized version of what Jennifer Aniston allegedly ate on the set of Friends every day for ten years. It is reminiscent of a tabouli salad but much better. It’s fresh and bright.

- 1/4 cup cooked quinoa
- 3 cups of lettuce chopped
- 1/2 cup of cucumber, chopped
- 1/4 to 1/2 cup parsley, chopped
- 1/4 to 1/2 cup mint, chopped
- 1/4 cup red onion, chopped
- up to 1/4 cup pistachios or pumpkin seeds
- 1/2 cup of canned chickpeas, drained and rinsed
- Cooked cubed tofu or tofu feta optional
- 1/4 cup of sun-dried tomatoes optional
Dressing
- 1/4 cup of hummus use this homemade version or a store-bought oil-free hummus
- 1/3 cup of lemon juice
- Salt optional (I use Benson’s Table Tasty sprinkled on the salad so I don’t think you need it)
- Whisk together
Instructions
- Cook quinoa according to directions
- Cube tofu and cook or make tofu feta, if using
- Chop up veggies
- Add everything to a large bowl, toss
- Make dressing and toss to combine
- Top with Benson’s Table Tasty (salt substitute), optional
Notes
- Start with 1/4 cup of mint and parsley each and see if you want more after it’s all tossed
- Don’t use all of the dressing at once when tossing the salad. Add about half, toss, see if you need more. You don’t want it to be soggy.
This all sounds delicious. Sometimes I put sun dried tomatoes in my humus. I think that could work with this recipe.
