Description
Moist delicious apple cake with a hint of spice is the perfect dessert or as a coffee cake.

- 2 tablespoons of flax meal (ground flaxseed)
- 1/4 cup of warm water
- 1/2 cup of date sugar or maple syrup (plus 2 tablespoons to coat the apples)
- 1/4 cup of applesauce
- 2 tablespoons of plant milk
- 1 teaspoon of white vinegar or apple cider vinegar
- 1 cup of spelt or oat flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/2 teaspoon of salt (optional)
- 1 teaspoon of ground ginger
- 1 teaspoon of cinnamon powder
- 1/2 teaspoon of ground cloves
- 1/4 teaspoon of nutmeg
- Pinch of cardamom powder
- 1 apple chopped
For Optional Date Caramel Topping (Courtesy of Lisa Rice from Kitchen Plantastic). A little goes a long way so drizzle lightly.
- 1 cup pitted Medjool dates
- 1 1/4 cup (or more) plant milk (start with less and add as needed)
- 1 teaspoon of pure vanilla extract
- Pinch of salt (optional)
Blend in a high-speed blender
Instructions
- Preheat the oven to 350 degrees
- Line an 8×8 glass with parchment paper
- In a small bowl mix the flax meal and warm water, let it sit for 5 minutes
- In a medium bowl combine maple syrup or date sugar, applesauce, and vinegar
- In another large bowl combine the dry ingredients; flour, baking powder, baking soda, and spices
- In yet another bowl (I know, sorry about the dishes) combine the chopped apples and 2 tablespoons of maple syrup, coat thoroughly
- Add the flax egg (your combined ground flaxseed and water) to the wet ingredients
- Combine the wet ingredients into the dry ingredients
- Mix the coated apples into the batter
- Bake for 25 to 30 minutes, checking at 25 minutes. Insert toothpick or knife; it’s ready when it pulls out clean
- Turn upside down on a cooling rack. Remove the parchment paper and let it cool completely
- Drizzle with optional date caramel topping
Notes
You will have plenty of leftover date caramel topping for your oatmeal or to dip apples in
Can I use date syrup instead of maple syrup?
Yes, but use less. I would use 1/3 cup.
