Description
This millet bread is slightly sweet and very smooth. It’s made from a whole grain and is naturally gluten-free. It’s light in color and tastes delicious.

- 2 and 1/2 cups of millet flour
- 2 teaspoons of baking powder
- 3/4 teaspoon of salt
- 1/2 teaspoon of baking soda
- 2 and 1/2 cups water
- 1 tablespoon of apple cider vinegar
- 1/4 cup of nutritional yeast
- 2 cloves of minced garlic
- 1/3 cup of whole psyllium husks
Instructions
- Preheat the oven to 325, do not use convection mode. Line a loaf pan with parchment paper.
- In a medium bowl mix the water, vinegar, and psyllium husks until blended. Let stand for about 5 minutes until it thickens into a gel.
- In a large mixing bowl whisk together millet flour, baking powder, salt, and baking soda until blended. Add nutritional yeast and garlic, stir again.
- Add the psyllium husk mixture to the flour mixture and mix until completely combined.
- With moist hands, put the dough into the lined loaf pan. Shape evenly and into a loaf shape.
- Bake in the preheated oven for 90 minutes until the surface appears pale golden brown, dry, and crusty. The bread will sound hollow when tapped. Cool in the pan on a cooling rack for 15 minutes.
- Remove bread from the pan and cool on the cooling rack completely before slicing.
Hey lauren, what sort of millet flour do you use so that your bread comes out so lite in color? Can you please tell me so that i can attempt tomake it? Millet is yelloish in color here in australia.
